
The vine and the olive tree and their delicious and fascinating
products, wine and olive oil, are deeply rooted in the cultural traditions
of our Tuscany and they certainly make up a genuine link between man, his
nature and his origins.
Fattoria Montanine, our farm, is about 260 m. a.s.l. (855 feet): its 74
hectares (182 acres) are
made
up by 11 hectares of vineyards and 20 hectares of olivegroves while the
woodland amounts to 30 hectares. The particular care in the workmanship
of the vineyard, the most modern agronomic techniques and the wise thinning
out of the grapes in the summer, let us have special raw material: grapes
rich in sugar, dyestuff and polyphenols.That is a very fine starting point
to make first-rate red wines.
We use the most modern technologies in our wine cellar, however the winemaking
processing still remains very traditional. The alcoholic fermentation can
take quite long and it allows to extract from the peels great quantities
of colors, flavours and tannins. All combined with a period of refinement
in great oak barrels, gives a tanning of evolved perfumes, a velvety softness
and a strong and austere character to the wines.
The particular microclimate of the area, the favourable exposition and characteristics
of the soil and the old age of some vineyards largely contribute to the
quality of the harvested grapes.
